This recipe is adapted from Nigella Lawson’s Nigella Express book available from all good book stores… or from Amazon.
3 very ripe bananas, 125ml veg oil (I used sunflower oil), 2 eggs, 250g flour, 100g caster sugar, 1/2 tsp bicarb or soda, 1 tsp baking powder, 150g butterscotch morsels (I used 200g white chocolate chunks)
Preheat oven to 200 degrees Celsius and line muffin tin with cases. Mash bananas and set aside. Pour oil into jug and beat in eggs. Mix dry ingredients together in a large bowl and add oil 7 eggs. Mash in bananas and fold in butterscotch/chocolate and decant into tin. Bake for 20 minutes. Eat and enjoy!
