Talking of Christmas preparations the other day with my friend, I mentioned that I’d be making some cranberry muffins again.
The recipe I use is from old favourite Nigella Lawson’s Domestic Goddess "Christmas Morning Muffins":
200g plain flour; 3 tsp baking powder; 1/2 tsp bicarb; 75g demerara sugar; good grating fresh nutmeg; 1 clementine; approx 50ml milk; 60g unsalted butter; melted; 1 lge egg; 150g dried cranberries and some demerara sugar and ground cinnamon for the topping….
Preheat oven to 200C.
Mix flour, baking powder, bicarb and sugar and grate over generous amount of nutmeg. Squeeze clementine juice into measuring jug then pour in mikl til it comes to 150ml mark. Add melted butter and egg and combine. Pour liquid ingredients into dry ingredients and stir til more or less combine (lumby batter makes better muffins). Fold in cranberries and fill 12 muffin cases.
Mix left over sugar and cinnamon and sprinkle over the top. Bake for 20mins.
Given that cranberries are a superfood, I see this as a great excuse to tuck in. Cranberries in cakes takes over from my summer staple of courgettes in cake. Huzzah!
