I had decided to use up some ready-rolled puff pastry (there, I admit it – I don’t make my own pastry!) and treat M with some cinnamon whirls. Its the easiest wee thing to put together – and full of sugar and spice and all things nice.
With the whirls safely stowed in the oven I came through to finish my pumpkin lasagne blog and forgot all about my wee pastry delights, until my nose did the reminding for me, and the smell of well done pastry and cinnamon sent me scuttling through to investigate.
You can see from the picture above that I’ve gone past the lightly golden stage. Still, they’re not completely ruined, and M swears he doesn’t mind them being crispy.
For those of you who want to treat yourself to an easy treat which can be eaten fresh, or frozen in batches, all you need is a sheet of ready-rolled puff pastry, 3 tablespoons organic golden caster sugar, a teaspoon of ground cinnamon and the same of mixed spice. Roll out the pastry, and cut into 2 smaller rectangles. Sprinkle with sugar, then fold pastry into the middle from the top and the bottom. Repeat and finally, roll into a log shape. Trim edges and cut into 1cm slices – lay on two baking sheets and brush with a beaten egg. Bake for 20 mins or so in a 180 deg oven – until lightly golden!
